I love making ice pops in the Summer! I’ve done frozen rosé ice pops, peach coconut ice pops to kiwi coconut, your girl loves making these sweet treats. There’s something about making homemade desserts that just get me. So today I’m sharing two new flavors: the coconut avocado ice pop and pineapple ginger ice pop recipe!

Pineapple Ginger Ice Pops Recipe

Ingredients:

  • 1/2 cup fresh pineapple chunks
  • 3oz (of half a small Dole can) Pineapple Juice
  • 1/2 Lime (and lime zest)
  • 4-5 Slices of Ginger (peeled and cut)
  • 4-5 mint leaves
  • 1 Packet Sugar in the Raw
  • 1/4 cup water

The Pineapple ginger ones take a little longer so I suggest making these first.

Peel and cut your ginger. Add the ginger, some lime zest, mint leaves, water, and sugar to a small saucepan. Let the water come to a boil, mixing often. Once the sugar is dissolved remove from heat and let cool.

Add the rest of your ingredients (pineapple, pineapple juice, lime juice) to your blender. Strain the ginger, mint and lime zest out of your liquid and add to your blender and blend.

This should make 5 ice pops, I had some liquid leftover.

Coconut Avocado Ice Pops Recipe

Ingredients:

  • 1 Ripe Avocado
  • 1 Sugar in the Raw Packet
  • 1/2 Bottle Vita Coco Pressed Coconut Water
  • 2 tsp Vanilla (I love Madagascar Vanilla)
  • 3 tsp water
  • A pinch of salt

This one is super easy because you add all the ingredients to your blender and blend! This should fill the other 5 ice pop molds.

I wish I would have paired these flavors half and half — I think they would have done really well together. If you want to so this, simply fill all your ice pop molds halfway with one flavor. Freeze for an hour. You can prop up your mold so it’s elevated on one side so you get a nice angled line between flavors. Then, add your other flavor on top.

Freeze overnight and enjoy!
