I posted a video of these peach coconut ice pops on my Instagram stories and received such a great response so I wanted to share them with you! I think ice pops are such a refreshing dessert. People also get so excited when you show up to a party with them. And they’re also great when for guests and kids. I mean what is not to love? These also happen to look aesthetically pleasing and are easy to make! Be the best guest and show up with these peach coconut ice pops.
Peach Coconut Ice pops recipe!
What you’ll need:
1 cup Coconut Milk (I like the GOYA Leche de Coco)
1/2 cup Vita Coco Pressed Coconut Water
1/8 cup honey
1 tsp vanilla
1 tsp sugar (if you want, I found after tasting the liquid mixed together it needed a little sugar)
3 peaches sliced with the skin on
1 tsp cardamom (only if you like it, I saw another recipe with cardamom and peaches and thought it may be good, but didn’t do much to the overall taste)
How to make them:
- Add the coconut milk, vita coco pressed coconut water, honey, vanilla, and sugar into your blender and blend until mixed.
- Pour into your ice pop molds, I like these molds.
- Cut your peaches in slices. Roll in cardamom (if you choose to).
- Add 2-3 slices into each mold, depending on how large your peaches are. I had smaller peached to I was able to add in 3-4 slices per pop mold.
- Freeze overnight!
Tip: If you want the peaches visible in your ice-pops – Let your pops freeze for about an hour, then take them out. With your ice pop sticks, that are already in the mold, gently press your peaches to the outside of the pop.
I used peaches from the North Fork that I got from one of my favorite farm stands! They are so delicious! You can even blend your peaches in with everything else, just be sure to take the skin off. I wanted the contrast of the peaches on the white coconut so I opted to put in chunks instead.
