While I enjoy a good cocktail as much as the next person, mocktails can serve a purpose for me too. (AND NO, I’m not pregnant) If I’m only going to have one drink, or if it’s early in the day I’d rather have something sans alcohol. Day drinking leaves me worthless after about 3:00 p.m. and I personally find that I wake up the next morning after a cocktail with dinner at only 90% of my best self. And I’m just trying to be my best self as often as possible. Do you feel me?
Well, if you do then I know you’re still reading. And if you don’t, you can actually easily add a shot of your choice to either of these drinks to create a grade A cocktail. But, today I’ll be highlighting two Summer mocktails that will leave you feeling refreshed!
Refreshed > Hungover (most of the time)
I received the spicy watermelon mocktail from Cocktail Courier in a gift box from Bliss to celebrate their What a Melon product launch. I’m personally hooked on the hydrator already. And for the second drink, I saw a honeydew smoothie in a magazine that sounded so refreshing, so I changed it up a bit to create this mocktail.
Two Summer Mocktails That Will Leave You Feeling Refreshed
Spicy Watermelon Mocktail
As I said above, I received a Cocktail Courrier gift to make this drink. It’s no longer on their website, but this is a similar one. If you still want to create this mocktail, I’ve got it figured out for you!
What you’ll need:
- Half a small seedless watermelon
- 4oz simple syrup
- 1tbs vanilla extract
- 1-2 Poblano chili peppers (depending on how hot you like it)
- 8 limes, juiced
- Seltzer
- Ice
- Tajin for the rim
Makes four drinks.
First, you have to cut up and blend your watermelon. Depending on the texture you like, you can add a little water to your watermelon when you blend, then strain if you want to get the pulp out. Or you can leave as is. I’ve done it both ways and personally like them both. Leave this in the blender, or when you’re done straining put it back in the blender.
Next, if you don’t have a store-bought simple syrup just combine sugar and water in a saucepan.
Add in the simple syrup, vanilla extract, lime juice, and the poblano peppers (seeded or unseeded again, personal choice), leaving a few pieces of the peppers aside for garnish.
Blend.
Get your mason jars or cocktail glasses and wet the rim. I like to use a wet paper towel and just run it around the top of the glass. Then put your tajin in a bowl and dunk your glass in to get it to stick around the rim.
Add ice and seltzer to your glass. I like to fill the glass at least half way with the seltzer. If you don’t like carbonation you can use water. Add your blended mixture.
Drop-in a paper straw, garnish and serve! Cheers!
Honeydew Cucumber Mint Mocktail
Since this was supposed to be more of a smoothie, it’s much easier to make. It’s also great if you have honeydew that’s about to get too ripe to eat. Just freeze it and enjoy it in your mocktail tomorrow!
What you’ll need:
- Half a honeydew, chopped then frozen overnight.
- 1 English Cucumber
- 4 sprigs of mint (3 are for garnish)
- 1 root of ginger
- Ice
- Water
Makes four drinks.
Freeze your honeydew overnight.
Once frozen, add your honeydew and a few mint leaves to your blender. Peel the skin off your ginger and toss that in too. I like to use a two-inch long piece. Peel your cucumber and add, saving some unpeeled for garnish.
Blend.
Add water and ice and blend again, adding more water/ice until desired texture is met.
Garnish with a few mint leaves and thinly sliced cucumber and you’re done!
