This almond flour waffles and pancakes recipe quickly became a favorite when I found out I had gestational diabetes. It’s low carb and low sugar yet doesn’t sacrifice taste. I like this recipe so much that I’ll be making these after baby girl arrives as a new lighter alternative!

Ingredients Almond Flour Waffles and Pancakes Recipe

  • 2 large eggs at room temperature
  • 1 teaspoon grass-fed butter melted
  • 1/4 cup milk of your choice (I used whole milk)
  • 1/4 tsp vanilla extract
  • 1 cup almond flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon granulated sweetener of your choice (I used coconut sugar, optional) 
  • 1/2 tsp Cinnamon or pumpkin spice (optional)

Almond Flour Waffles and Pancakes Recipe

This almond flour waffles and pancakes recipe makes about 4 medium or 8 small pancakes and about 5 mini waffles or 1 Belgium waffle.

For this quick and easy almond flour waffles and pancakes recipe all you need to do is mix your dry ingredients first. So that’s your almond flour, baking powder, granulated sweetener, and cinnamon or pumpkin spice (if you’re adding one). I’ve done the recipe with and without this addition and it just adds a nice fall flavor if that’s something you like!

Next, melt your butter and let it cool for a minute or two before mixing it with your eggs, milk, and vanilla. Whisk or fork this all together and fold it into your dry ingredients. I like putting the mixture back into a measuring cup for an easier pour.

What is the texture of almond flour waffles and pancakes?

First,  they’re definitely more dense than your typical buttermilk pancake. So if you’re pouring them into a pan or on a griddle I like to use a spoon to spread out the mixture a bit. The same goes for the almond flour waffles, they need a little help spreading out.

Finally, I find they don’t bubble as much as a typical pancake so make sure you check underneath after about two minutes or so to make sure they’re not burning. Cook on medium heat or medium/ high for waffles.

Can you reheat almond flour waffles and pancakes?

The answer is yes! I like to store my leftovers in aluminum foil with a piece of wax paper in between each pancake or waffle. I reheat them right on the stove with a little butter in a pan but you can put them in the microwave as well!

Are almond flour waffles and pancakes healthier for you?

You may be asking yourself now, how many carbs are in almond flour waffles? Is it worth swapping out your tried and true all-purpose flour? Absolutely. There are around 95g of carbs in one cup of all-purpose flour and around 20g of almond flour. Plus you get 24g of protein in almond flour. Which if your like me and trying to control your blood sugar with your diet the protein always helps! Obviously do your research and check with your doctor but I’m glad to report I can have two mini waffles or two-three small pancakes with blueberries and a teaspoon of syrup and it doesn’t elevate my sugar.
